The first day of training begins with a well executed green chile cheeseburger.
Green chile peppers are roasted and ground into a thick sauce. Burgers are seared on the flat top grill, monterey jack cheese is melted on top, the sauce is ladled on, bathing the meat and cheese in a savory, subtly smoldering blanket of green heat that builds but doesn’t burn. The whole shebang then nests in a pillow-like roll.
