Pork Two Ways Today
Puerto Rican Roast Pork (Pernil) is pork shoulder that has been marinated in garlic, onion, oregano, vinegar and salt and then slow roasted. We’re serving it with Arroz con Gandules (Rice with Pigeon Peas).
From the same large piece of pork, we’ve also prepared a Five Hour Pork Ragù. The shoulder is slow cooked with tomato, onion, garlic, red wine and star anise. Spooned over soft organic polenta, it is hearty and rocketlicious.
Starting today, answering many requests from you rabbits, we’re going to be offering a small salad of organic greens simply dressed with vinaigrette.
