Something New On The Menu . . . . Rigatoni With Braised Pork, Arugula & Lemon

Process : Slowly braise a naturally raised pork shoulder with fennel, onions, celery, and chicken stock. Toss rigatoni with the now shredded braised pork, arugula, a little butter and lemon and dust the resulting mound of lusciousness with romano cheese. Rich and light at the same time, it will propel you into a low orbit of satisfaction .
